Yay good job so far! Sometimes I hate getting out of bed in the morning to go work out, but I feel so much more lively the rest of the day. It's amazing the difference it makes :)

I actually prefer summer squash to zucchini. Call me stupid but I think it has more flavor. Alas....I usually put it into a foil packet with pepper and a little olive oil and then grill it until just tender. Not an option for everyone who doesn't have an outside grill. You can also saute it on medium high heat with a little olive oil and pepper til brown but not mushy. Then sprinkle a little grated parmesan on the top when you serve it.

Smitten kitchen has a tasty ratatouille that Tawny & I made with zucchini, squash, eggplant, and peppers. We served it over couscous with a little goat cheese on top... delicious. My personal fav is just to grill it up with some olive oil, sea salt, and cracked pepper, but I know you don't have a patio to grill on.

101 Cookbooks has a yummy looking Spinach & Zucchini soup (http://www.101cookbooks.com/archives/spinach-and-zucchini-soup-recipe.html) but it may be too hot in Boston for that right now... if you want to keep on pickling, she has a recipe for quick pickled zucchini too.

Not to sound like an oldtimer, but don't hurry the next steps in your life. They come too quickly. Instead of waiting for September.....enjoy the moment. Walk around Davis Square and watch the people. Read a book. Visit your friends. Be good to yourself before your classes begin and you are thrown back into a busy schedule. And keep writing your blogs because I enjoy the heck out of them!

I mixed the aioli with some greek yogurt and low fat sour cream to stretch it for less points! : )
I agree with your point, but it's been so hard to motivate myself when I have this much free time. I think I may have an idea to help me get moving though!

I feel like you should try to change your perspective from the waiting game, because later you will be looking back wondering why you didn't make this time more interesting&exciting. Though, I can imagine that waiting to get a kitty would be a tough one. :)

If you haven't already, you should try your roasted artichoke dipped in the shortcut basil aioli from the deviled eggs recipe. Heavenly.

I LOVE Crispy Chicken Pad Thai from Pho and I!!! I was on vacation in Boston, and accidently ran across Pho & I and we fell in love with it! We went back twice.
The whole fried noodle thing did make it a bit greasy -- but I cant get those flavorrs out of my head! I have been trying to replicate this recipe every since I left Boston! If anyone had a recipe I would be SO grateful!!!

I think I will quit buying cooked chicken and start making my own again. You make it look so easy and delicious. I can't wait to go home and buy a roasting chicken and get creative. Nice Pics!
