I’m proud of the dinner I made tonight. Not because it was technically complex or even the best thing I’ve ever eaten. I’m proud of it because I made it all from scratch and I tried to use 90% whole foods. I’ve been reading In Defense of Food lately and I like what it has to say.
For tonight’s dinner, I made homemade whole wheat pizza dough and topped it with zucchini from my Father-in-law’s garden, leftover free range chicken (I roasted it the night before), tomatoes, goat cheese, and fresh mozarella. I made some (secret family recipe) salad dressing and topped the salad with more veggies from the garden.
I’ve been struggling lately to figure out what I should be eating and even though this wasn’t a perfect example of where I think I want to go, it was a satisfying start.
