I know that this is a little weird to admit because we have had two huge blizzards in Massachusetts in the last month and the ground is currently covered in a mucky wet slush, but I’ve been eating a lot of popsicles lately. This weekend, after an attempt at snowboarding, I went into the lodge and ordered an iced chai. I’m not sure why I like cool things on cold days… Maybe I feel that after I struggle to trudge through thick snow (or fall on my butt several times while snowboarding), I deserve something cool and refreshing.
My freakishness is not the only reason I’ve been eating popsicles. The second reason is this:
Mr. B got me a popsicle maker for Christmas. It’s neat for impatient people like me because it has some magical chemicals inside that make the device super cold and can freeze your popsicles in about 8 minutes. I know it will be lots of fun in the summer, but I couldn’t wait that long to try it out! (See? Impatient!) So far, I have been very focused on Pina Colada popsicles and I’ve even added thin slices of pineapple and fresh coconut. I’ve also tried adding frozen pomegranate seeds, which I liked, but Mr. B wasn’t a big fan of.
As you can see, the outside of the popsicle freezes first, so you can suck out the juice in the middle with a straw and add a different filling! Creamsicles anyone? I have some frozen strawberries in the fridge, so I think my next pop will be a strawberry yogurt-sicle. I’ll keep fine-tuning my recipes. After all, there’s only 153 days til summer!
