I used golden beets and it felt kind of magical. Just roast them in tin foil for about an hour and the skin rubs right off revealing the gorgeous firm yellow interior.
You can slice them or cube them and serve them with goat cheese, nuts, micro greens, citrus, dried cranberries, dressing, or even just olive oil, salt and pepper. This food is low fuss and nutritious!
