Chadwick Granola Redux

Okay, I am drooling right now. I want to share the joy with you and I want to share it better. The recipe Buddy sent me was a little sparse because he’s a busy man and I’m thrilled to have it at all, but to help out those in the home audience, I’m going to give you more words and pictures to help you out.

1 scant cup canola oil
1 cup honey- that’s one whole bear, if it helps. (He looks sad doesn’t he?)
3 tsp vanilla
3 cups quick oats
1 cup wheat germ
1/2 cup dried cranberries
1/2 cup sliced almonds

Preheat oven to 300°F. In a saucepan mix oil, honey, and vanilla over low heat until well mixed.  This will mix easily into one deliciously sweet concoction.  I found the amount to contain a little too much oil, so I cut it back by a few tablespoons.

In a separate bowl mix all other dry ingredients.  I used steel cut oats which gave everything a uniform texture, but uncut oats would also work just fine.

Mix the wet and dry ingredients together in bowl and pour onto a baking dish.

Bake for 20 minutes. Turn every few minutes. You may find that the granola is still quite wet after 20 minutes.  If so, bake for another 5 to get rid of some of that liquid, but make sure the granola is still glistening when you take it out so that it doesn’t get too hard as it cools.  Let cool uncovered for an hour or so before storing in an airtight container.

Makes approx. 5 cups.
